      Here at the Village, we try not to play favorites. But, honestly, this is our most beloved decaf we sell. Hands-down. Just don’t tell it we said so, or it will start demanding all kinds of crazy pay raises. It is the same coffee as its caffeinated counterpart, but the Ethiopian Sidamo Decaf is water-processed to remove the caffeine naturally without the use of chemicals. The decaffeination process does slightly alter the flavor, but fret not my friend, for it is still delicious. We roast this decaf to a “city+” level to preserve the exquisite flavors in the bean, though it appears darker due to the decaffeination process. In the cup, this coffee is clean and light in body with a bright dried cherry flavor and a lively floral finish.

We roast the Yirgacheffe lightly to a “city+” roast to maintain the delicate flavors and citrusy tones in the cup. This coffee delivers abundant floral and mouth-watering citrus flavors, with a tea-like quality and a peachy aroma that are not to be missed. It shouldn’t come as a surprise. Ethiopians have been at this longer than anyone else and the Yirgacheffe is proof-positive that practice makes perfect. So don’t give up your dreams of a becoming a rock star. We believe in you!       This coffee starts in a group of 3 co-ops and multiple smallholder coffee farmers in the western province of Rwanda in Karambi, Nyamasheke. Meanwhile, back at the washing station, the coffees from all these farms are blended together and meticulously depulped, washed, fermented, and carefully dried on raised patios before being sent for finishing in Kagali. The Gatare Washing Station consistently produces some of the best coffees coming out of Rwanda year after year.
