    ETHIOPIA Washed Sidamo

    About the Grower
This coffee is sourced from smallholders in Sidamo. Farmers cultivate coffee at 1,900 to 2,200 meters above sea level. They deliver their coffee cherries to a local washing station owned and operated by Israel Degefa.

Many would say that the strength of Sidamo coffees lie in the regions’ diversity of profiles. The many microclimates and varying soil types lead to striking differences from town to town. But across all Sidamo coffees is a profound complexity that many attribute to the diversity of local landrace varieties. Varieties can differ from town to town and even farm to farm where each farmer may have more than one rare and unique variety not found anywhere else. When all these different varieties are blended at the local cooperative, the resulting blend expresses the complexity of the plant genetics in the area.

    The Cup
When tasting this coffee our team found it to be soft and gentle with stone fruit notes like a ripe peach. There is also some citrus brightness, but it’s soft, not super aggressive. There is a vanilla sweet cream lingering taste that keeps you coming back for more. We have found this coffee performs best with a pour over, however, you can brew this coffee with any method and have an enjoyable experience. The profile is light to highlight the delicate, floral, tea like characteristics of this beautiful coffee.
